Summer Cobb Salad
Recipe


Dressing
 1 orange 
 1/4 cup honey 
 1 1/2 tablespoons vegetable oil 
 2 tablespoons rice vinegar or white wine vinegar 
 1/2 teaspoon each salt and coarsely ground black pepper 

Salad
 2 packages (10 ounces each) torn romaine lettuce (about 16 cups) 
 1/2 medium cucumber, seeded and thinly sliced 
 1 1/2 cups strawberries, hulled and sliced 
 1 large carrot, peeled and cut into julienne strips (1/2 cup) 
 1/2 cup toasted pecan halves, coarsely chopped (optional) 
 1/4 cup thinly sliced red onion 
 1/4 cup coarsely grated radishes 
 1 cup blueberries 

  1. For dressing, using Lemon Zester/Scorer, zest orange to measure 1 teaspoon zest. Juice orange using Juicer to measure 1/3 cup juice. In Small Batter Bowl, combine orange zest, juice, honey, oil, vinegar, salt and black pepper; whisk using Stainless Steel Whisk and set aside.

  2. For salad, arrange lettuce over bottom of Simple Additions® Large Bowl, forming a flat surface. Remove seeds from cucumber using The Corer™. Thinly slice cucumber using Ultimate Slice & Grate; cut slices in half. Hull strawberries using Cook's Corer®; slice using Egg Slicer Plus®. Cut carrot into julienne strips using Julienne Peeler; cut strips into 1-inch pieces using Paring Knife. If desired, coarsely chop pecans using Food Chopper. Thinly slice red onion using Chef's Knife. Coarsely grate radishes using Deluxe Cheese Grater.

  3. To assemble salad, arrange cucumber slices in a row diagonally across lettuce. Arrange blueberries and strawberries in rows on either side of cucumber. Repeat rows with carrot, pecans, if desired, red onion and radishes. Drizzle dressing over salad; toss using Bamboo Spatula Set and serve immediately.

Yield: 16 servings or 24 sample servings

Cook's Tip: For a heartier main-dish salad, add 2 cups diced cooked chicken to toppings, if desired.

To toast pecans, place in Small Micro-Cooker®. Microwave on HIGH 2-3 minutes, stirring after each 30-second interval.
