 1 cup chicken broth
2 tablespoons masa harina (instant corn masa mix)
1 can (29 ounces) hominy, rinsed and drained
2 cups shredded rotisserie cooked chicken
2 cups (8 ounces) shredded Chihuahua cheese, divided

  1. Cook bacon in Family (12-in.) Skillet over medium heat until crisp. Remove bacon from skillet; drain drippings, reserving 1 tablespoon in skillet. Crumble bacon; set aside.

Dice bell pepper using Chef's Knife; finely chop jalapeño peppers and onion using Food Chopper.

  3. Place bell pepper, jalapeño peppers, onion and garlic pressed with Garlic Press into skillet. Cook and stir over medium heat 2 minutes. Add broth and masa harina; cook 1 minute. Add hominy, chicken and reserved zucchini; cook 3 minutes or until mixture is slightly thickened, stirring occasionally.

  4. Reduce heat to low; stir in half of the cheese. Top with reserved bacon, cilantro, tomatoes and remaining cheese; cover and cook 2 minutes or until cheese is melted. Serve using Nylon Spoon.
