The Pampered Chef ® Easy Posole Skillet Recipe

| 4 slices bacon, crisply cooked, drained and crumbled |
| 1/4 cup snipped fresh cilantro |
| 2 plum tomatoes, seeded and diced |
| 1 medium zucchini, sliced |
| 1 medium green bell pepper, seeded and diced |
| 2 jalapeño peppers, seeded and finely chopped |
| 1 small onion, finely chopped |
| 3 cloves garlic, pressed |
| 1 cup chicken broth |
| 2 tablespoons masa harina (instant corn masa mix) |
| 1 can (29 ounces) hominy, rinsed and drained |
| 2 cups shredded rotisserie cooked chicken |
| 2 cups (8 ounces) shredded Chihuahua cheese, divided | |
- Cook bacon in Family (12-in.) Skillet over medium heat until crisp. Remove bacon from skillet; drain drippings, reserving 1 tablespoon in skillet. Crumble bacon; set aside.
- Snip cilantro using Kitchen Shears and dice tomatoes using Chef's Knife; set aside. Slice zucchini into 1/4-inch-thick rounds using Crinkle Cutter; cut rounds in half and set aside. Slice off stems from bell pepper and jalapeño peppers using Chef's Knife; remove seeds using Cook's Corer®. Dice bell pepper using Chef's Knife; finely chop jalapeño peppers and onion using Food Chopper.
- Place bell pepper, jalapeño peppers, onion and garlic pressed with Garlic Press into skillet. Cook and stir over medium heat 2 minutes. Add broth and masa harina; cook 1 minute. Add hominy, chicken and reserved zucchini; cook 3 minutes or until mixture is slightly thickened, stirring occasionally.
- Reduce heat to low; stir in half of the cheese. Top with reserved bacon, cilantro, tomatoes and remaining cheese; cover and cook 2 minutes or until cheese is melted. Serve using Nylon Spoon.

Cook's Tip: Shredded mozzarella or Monterey Jack cheese can be substituted for the Chihuahua cheese, if desired.
Masa harina is finely ground cornmeal that is used to make tortillas. All-purpose flour can be substituted for the masa harina, if desired.
